Pairing Recipe
Classic Beef Chili
Fresh poblano, toasty ancho chile powder, fresh oregano and thyme, and Udofot beer come together to make a flavorful bowl of chili perfect for game day with friends.
Ingredients:
2 tbsp olive oil
1 large yellow onion, chopped
2 large poblano chilis, seeded and chopped
12 cloves garlic, minced
3 lbs chuck roast, cut into small cubes
1 (6 oz) can tomato paste
1/3 c ancho chili powder
2 tbsp ground cumin
1tbsp kosher salt
1 tsp black pepper
1 tbsp fresh thyme leaves
1 tbsp fresh oregano leaves
2 (15 oz) cans red kidney beans, drained and rinsed
1 (15 oz) can black beans, drained and rinsed
1 (28 oz) can crushed tomatoes
2 c chicken broth
1 can Udofot beer
Shredded cheddar cheese, sliced jalapeño chilis, sliced radishes and sour cream for serving
Directions:
Heat olive oil in a large Dutch oven over medium-high heat. Add onion, poblano and garlic and cook,
stirring often, until tender, about 5 minutes.
Add chuck roast cubes and cook, stirring occasionally until the cubes are cooked (no longer pink), 8-10
minutes.
Drain beef mixture and return to Dutch oven over medium-high.
Add tomato paste, ancho chile powder, cumin, salt, pepper, thyme and oregano and cook, stirring often,
2 minutes.
Increase heat to high. Stir in beans, tomatoes, chicken broth, and beer and bring to a boil. Reduce heat
to medium-low and simmer, stirring occasionally, until heated through, about 30 minutes.
Serve chili with desired toppings.
