Merry’s Irish Cream Truffle Fudge
Ingredients:
First Layer
2 c semisweet chocolate
1 c dark chocolate
1 c white chocolate
¼ c butter
3 c powdered sugar
1 c Merry’s Irish Cream
1 ½ c chopped pecans
Second Layer
1 c semisweet chocolate
½ c white chocolate
4 tbsp Merry’s Irish Cream
2 tbsp butter
1 c crushed candy canes
Directions:
Butter an 8x8 inch pan
In the top half of a double boiler, melt semisweet, dark and white chocolate along with ¼ butter until it’s melted and combined.
Add powdered sugar and Merry’s Irish Cream and stir until mixture is smooth. Stir in nuts. Place mixture in the prepared pan, cover with plastic wrap and refrigerate until cool.
In the top half of a double boiler melt the remaining chocolates until smooth. Remove from heat and beat in the butter and Merry’s Irish Cream until smooth. Spread the topping over cooled fudge with a knife or spatula and sprinkle peppermint candy chips evenly on top. Cover with plastic wrap and refrigerate for 1-2 hours.
